ที่มาของคำว่า ‘โต๊ะจีน’ สันนิษฐานว่าน่าจะมาจากวัฒนธรรมการกินอาหารของคนจีน เพราะคนจีนมักอยู่กันเป็นครอบครัวใหญ่ ทำให้เกิดวัฒนธรรมการกินอาหารร่วมกันแบบนั่งล้อมโต๊ะพร้อมหน้า กินอย่างไม่รีบร้อน กินไปคุยไป หากเป็นการกินอาหารในครอบครัว ระหว่างนั้นจะมีการสอนลูกหลานให้มีความรักใคร่กลมเกลียวกันในหมู่ญาติพี่น้อง แต่หากกินในหมู่เพื่อนฝูง ก็จะใช้ช่วงเวลานี้สนทนากันถามสารทุกข์สุกดิบ บ้างก็ใช้โอกาสนี้เจรจาต่อรองทางธุรกิจไปในตัว

อาหารบนโต๊ะจีนมีหลากหลาย ใช้ตะเกียบเป็นอุปกรณ์ในการกินเป็นหลัก ประกอบด้วยอาหาร 8-10 อย่าง เพราะเลข 8/9/10 เป็นเลขมงคล ส่วนเลขที่ไม่เป็นมงคลคือเลข 4 เขียนว่า 四 ออกเสียงว่า ‘ซื่อ’ แปลว่า ‘สี่’ ซึ่งพ้องกับคำว่า 死 ออกเสียงว่า ‘สื่อ’ แปลว่า ‘ตาย’ สำหรับอาหารที่อยู่บนโต๊ะก็มีความหมายที่เป็นมงคลเช่นกัน ซึ่งแบ่งออกเป็นกลุ่มตามลำดับการเสิร์ฟดังนี้

กลุ่มที่ 1 คือ ออร์เดิร์ฟ อาหารรองท้องเรียกน้ำย่อย

กลุ่มที่ 2 คือ ซุปน้ำข้น บำรุงร่างกายอย่าง ซุปหูฉลาม และ ซุปกระเพาะปลา

กลุ่มที่ 3 คือ กลุ่มกับข้าว จากเนื้อสัตว์มงคล เช่น

หมู สื่อถึงความมั่งคั่ง กินดีอยู่ดี
กุ้ง สื่อถึง มังกร ความมีอำนาจ ลาภ ยศ เงินทองไหลมาเทมา
ไก่ ตัวแทนของหงส์ หมายถึงความก้าวหน้า
เป็ด เป็นมงคลของชีวิต ทำให้ชีวิตมีแต่สันติ ร่มเย็น
ปลา มีความมงคลในเรื่องเงินๆ ทองๆ ทำให้มีเงินเหลือกินเหลือใช้
กลุ่มที่ 4 คือ ซุปใส จัดมาล้างปาก ดับความเลี่ยน

กลุ่มที่ 5 คือ เมนูอิ่ม เมนูอิ่มมาอยู่ลำดับหลังสุดเนื่องมาจากความเชื่อของชาวจีนที่จะต้องเลี้ยงดูแขกอย่างดี จึงจัดอาหารดีๆ มาก่อน และส่งท้ายด้วยเมนูหนักๆ สำหรับแขกที่ยังไม่อิ่ม
